Here at Lean Green DAD, we like to take recipes from books and other places that we find and make them vegan. We also like to make them quicker than the recipe calls for! As a busy parent, we often do not have time to make a gourmet meal that takes and hour to prepare and then another half hour to cook in the oven. My mom (aka Grandma) is always trying to find something tasty and vegan for our family to eat. I was so proud of her when she brought over these blueberry crumble tarts. You have to give these a try for a sweet after-dinner treat or a solid morning breakfast.

Vegan Blueberry Crumble Tarts

Ingredients
  

  • 2 cups organic blueberries
  • 1/4 cup date sugar OR 1/4 cup of maple syrup
  • 1/4 cup flour
  • 1 tbsp cornstarch
  • 1 pkg vegan, graham crackers shells
  • 1/4 cup oats of your choice
  • 1/2 cup brown sugar
  • 2 tbsp. vegan butter We used Earth Balance.

Instructions
 

  • Preheat oven to bake at 375°F
  • Mix the blueberries, date sugar (or maple syrup) and cornstarch together in a bowl and place into your tarts
  • In another bowl, mix your flour, oats and brown sugar with your butter and sprinkle it over the blueberries
  • Let them bake for 20 minutes or until brown

Notes

Hope you enjoy this one! It's super easy to make things that you love without using animal-based products. Substituting regular sugar with date sugar and substituting dairy butter with plant-strong butter is one of the easiest things you can do to begin to lean towards a healthier, plant-based lifestyle!
