You Don’t Have To Give Up Pancakes

When our youngest son learned that he was gluten-free, we struggled at first…especially because we were already eating a vegan diet. But the more we learned, the more we tried to simplify. We learn how to make things quick and easy and this recipe is my favorite. With just seven ingredients (most of which you already have in your kitchen), you can just pop all of this into a blender and combat that question from your kids on Sunday morning: “What’s for breakfast, Dad?” We absolutely love this plant based pancake recipe.

Cook Time 2 minutes
Servings 8 pancakes

Ingredients
  

  • 2 cups plant based milk (almond or oat are best)
  • 2 tbsps baking powder
  • 1 tbsp maple syrup
  • 1 pinch sea salt
  • 1 whole banana (ripe)
  • 2 cups gluten-free, all purpose flour

Instructions
 

  • Grab your blender
  • First add your liquids: almond milk, vanilla extract, and maple syrup to the blender
  • Next add your dry goods: flour, baking powder, and sea salt
  • Drop your banana in last and blend till smooth
  • Heat up your cast iron skillet on medium high heat until you see it smoking just a little. Add oil if you prefer and pour a small to medium sized pancake onto the skillet. You sould be able to fit two.
  • Give them a flip when the bubbles form and then serve and enjoy!
