One of our favorite spots to eat here in Orlando is Infusion Tea Room in College Park. They have an eclectic collection of teas along with a KILLER vegan/vegetarian menu. My fave dish, sweet potato soft tacos, are ALWAYS on my mind! Well today I was craving them, and with not enough time to actually go there, I decided to try and make them myself!
So I hit the kitchen and looked up some more inspiration from one of the Minimalist Baker’s recipes. I came up with this list of ingredients for myself that included some deliciously roasted chickpeas!
Ingredients:
• 6-8 small to medium sweet potatoes
• 1 can of garbanzo beans (chickpeas)
• ½ tsp cinnamon
• ½ tsp paprika
• ½ tsp cumin
• non-dairy sour cream (totally optional, I used Tofutti brand)
• mango chutney (I bought this at the farmer’s market, but really any sweet salsa will do!)
• non-dairy cheese shreds (also optional, I like daiya brand)
• 1 avocado
• 1 tsp olive oil (optional, you can also use just water)
• Flour tortillas (sub corn tortillas for gluten free)
Method:
- First, wash and slice the potatoes into disks and then quarter them.
- Toss the potatoes in the olive oil and bake them in the oven at 400 degrees on a non-stick cookies sheet for about ten minutes. If you are not using olive oil, you might want to consider steaming the potatoes to prevent them from burning.
- While your potatoes are baking or steaming, drain and rinse your chickpeas. Add spices to a bowl and mix them together.
- Once potatoes are ready, take them out of the oven, turn them, add chickpeas with spices to the cookie sheet and bake for another 10-15 minutes.
- Once your time is up and everything is nice and toasty, simply dress your tacos and you will be ready to go!
I layered onto the flour tortilla in this order: mango chutney, sweet pots and chickpeas, non-dairy sour cream, avocado, and to top it off, daiya mozzarella cheese shreds. (I think cheddar would taste nice as well!)
*Health Watch! Daiya products contain non-GMO oils. While many of the oils in these products are non-GMO, all oils are high in saturated fat, calorically dense, and should be limited or eliminated to maintain a healthy lifestyle.
This home cooked replica of my favorite dish was to die for! I felt comforted, satisfied, AND I was off to work in a jiffy. I’m so glad I didn’t settle for less than my craving. I’m even more glad that I didn’t sacrifice health due to a slight time deficit. It was a successful make it work moment!
