Vegan Meatballs Recipe - The Perfect Vegan Meatball Sub

Special note: If you are not wanting to make the beanballs yourself, look for a brand of meatless meatballs called "Gardein" in the store. They will be in the frozen section waiting for you. Super easy. If you are looking for a vegan cheese, go with the Daiya brand of mozzarella shreds.

Ingredients
  

  • 1 package Engine 2 Plant-Strong Plant Burgers found in the frozen section of your grocery store
  • 1 jar Marinara Sauce
  • 1 tbsp Ground Flaxseed
  • 2.5 tbsp Water
  • 4 Whole Wheat Hot Dog Buns

Instructions
 

  • Place your frozen Engine 2 patties on a microwave safe plate and microwave per the directions on the box (45 seconds each side).
  • While your patties are getting warm, make a quick flax egg. To do this, place 1 tablespoon of ground, organic flax seed with 2.5 tablespoons of water.
  • Time to get your buns ready! Place your hotdog buns in the toaster oven for a light toast to get them ready. One or two minutes should be fine...just enough to warm them.
  • Once your patties are done, mix them together in a mixing bowl and add the flax egg. Roll the crumbles into beanballs and place them in your skillet to cook in the marinara sauce for 3-5 minutes and you are ready to serve your subs!
  • Place your beanballs into the bun and devour!
  • If you like a bit of melted goodness, you can add some plant-based cheese (as pictured above), but that is only an option. If you want to stay 100% whole food, plant-based, you can eat them as the recipe says. : )

Notes

Add a fruit and veg on the side to round out your meal. I love fresh cut pineapple as the fruit and fresh broccoli with Engine 2, oil-free hummus for this recipe!
