Spray a baking sheet with non-stick spray and preheat the oven to bake at 350°F.
Lightly coat your hands with flour, depending on the consistency of your pizza dough, to keep the dough from sticking to your hands.
Roll each small piece of dough into a quarter-sized ball.
Once you have the doughnuts ready, lightly coat them in water with your fingers, and then roll them in the cinnamon/sugar mixture and place them on the baking sheet.
Bake the doughnut holes for five minutes, then let them cool for 2-3 minutes before serving.
