Wild Rice & Pea Salad Recipe

Ingredients
  

  • 1 pkg microwaveable wild rice
  • 1 cup frozen green peas
  • 1 cup canned chickpeas - rinsed & drained
  • 1 cup grape tomatoes - rinsed & halved
  • 1/4 cup fresh parsley - rinsed & chopped
  • juice from 1/2 lemon
  • 1 tsp smoked paprika
  • salt & pepper to taste

Instructions
 

  • Pour the package of rice into a large mixing bowl and break up the rice gently with a fork.
  • In a small saucepan, bring the green peas to a boil in three cups of water.
  • As soon as the water begins to boil, remove the peas from the heat, drain them, and rinse them well in cold water.
  • Add the chickpeas, tomatoes, parsley, lemon juice, paprika and green peas to the rice, and combine all of the ingredients well.
  • Add salt and pepper to taste.
  • Serve immediately, or chill in the fridge before serving.
