Vegetable Rice Tacos Recipe

Ingredients
  

  • 1 cup sliced yellow onion
  • 1 cup sliced bell pepper
  • 1 cup sliced tomato
  • 1 cup sliced mushrooms
  • 1 - 8 oz package quick rice
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp cumin
  • 1 cup slaw shreds
  • 1/2 cup plant-based mayo
  • 1/4 cup lime juice
  • 1/4 cup fresh chopped cilantro
  • 8-10 small flour tortillas

Instructions
 

  • In a large skillet cook the onion, tomato, bell pepper, mushrooms, rice, salt, pepper, and cumin over medium-high heat, stirring often, for ten minutes.
  • In a smaller skillet, brown the tortillas over medium heat for fifteen to thirty seconds on each side.
  • To make the sauce, combine the mayo and lime with the cilantro and mix until the sauce is smooth.
  • Spoon the vegetable and rice mixture into the toasted tortillas, and top with the slaw shreds and dressing before serving.
