Easy Vegan Chicken Noodle Soup
Ingredients
- 2 packages Gardein Frozen Chick"un" Strips (or sub for one can of chickpeas)
- 12 oz Brown Rice Noodles Tinkyada is a great brand
- 2 cups Matchstick Carrots
- 2 cups Celery diced
- 6 cups Organic Vegetable Broth
- 2 cups Water
- 1 Vegan Bouillon Cube
Instructions
- Cook the Gardein Chickun Strips in a skillet for 5-10 minutes on medium-high.
- Bring veg broth and water to a boil and add in all the ingredients. Ater ten minutes, throw in your brown rice noodles and let them cook another 8-10 minutes.
- Enjoy together as a family!
