Homemade Vegan Biscuits and Gravy Your Kids Will Actually Eat
When it comes to feeding kids that are part of a plant-based family, it’s all about keeping it simple.
For me, when lots of ingredients are put in front of my kids, they get skeptical. For this reason, I like to have just one or two things in a recipe. In this recipe, the gravy itself becomes the centerpiece to a masterfully filling meal. Keeping the gravy moving is what it’s all about in this vegan biscuits and gravy recipe, so make sure you don’t set it and forget it.
One of the best things about this recipe is that after you make it, you can use the leftovers over rice and veggies or even as a great gravy on top of your next meal! Vegan Biscuits and Gravy
Ingredients
- 2 cups Sliced White Or Bella Mushrooms
- 1/2 cup White Onion diced
- 3 cloves Garlic minced
- 3 tbsps Extra Virgin Olive Oil
- 3 tbsps All Purpose Flour
- 1 cup Vegetable Broth
- 1 1/2 cups Unsweetened Cashew Milk or any other plant-based milk
- 1 cup Gardein Beefless Crumbles
- 1 package Annie's Organic Biscuits
Instructions
- Bake your Annie's biscuits in the oven according to the package directions.
- Sauté over medium heat, 1/2 cup onions and 3 cloves garlic in 3 Tbsps of butter or olive oil for 2 minutes.
- Add 2 cups sliced mushrooms to the pan. Sauté 2 more minutes.
- Turn down the heat and sprinkle 3 Tbsps all-purpose white flour around the pan...sprinkling is important! Don’t dump in clumps!
- Stir the flour in for a minute, coating your mushrooms and onions in flour. Slowly pour in your 1 cup veg broth, and your 1 1/2 cup unsweet plant-based milk, alternating pouring a little bit of one and then a little bit of the other by half cups.
- Bring back up to medium heat as you do this. Add 1 cup Gardein meat crumbles and continue stirring the gravy. Never stop stirring the gravy!
- As you continue to stir, it is ready when the consistency looks right for you...salt and pepper to taste!
