  • 1/2 cup sliced strawberries
  • 1/2 cup raspberries
  • 1 tbsp flax seeds
  • 1 cup plant-based milk
  • 1 1/2 cup pancake mix
  • 2 tbsp plant-based buttery spread plus more for serving
  • 1/4 cup brown sugar plus more for serving
  • 1 tsp cinnamon
  • 1/4 tsp salt


  • Finely grind the flax seeds in a blender or food processor.
  • Pour the seeds into a large mixing bowl and add the plant-based milk.
  • Allow the mixture to sit for a few minutes while you gather the rest of the ingredients.
  • Add the rest of the ingredients to the bowl and combine the mixture well.
  • In a medium-sized skillet, over medium heat, cook the pancakes for two to three minutes on each side. Serve warm topped with brown sugar and plant-based buttery spread.
