Spinach Piccata Linguine Recipe

Ingredients
  

  • 1 12 oz package dry linguine
  • 1/2 cup plant-based butter substitute
  • 2 cloves garlic minced
  • 1/2 cup lemon juice
  • 2 tbsp capers
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cup fresh spinach rinsed & well-drained

Instructions
 

  • Cook the linguine according to the directions on the package.
  • In a small saucepan, melt the plant-based butter over medium heat.
  • Add the garlic, salt, pepper, capers, and lemon juice, and continue to cook until the mixture begins to bubble.
  • Add in the fresh spinach a bit at a time, and stir into the sauce just until the spinach is wilted, before adding more spinach.
  • When all of the spinach is wilted, remove the sauce from the heat and pour it over the drained linguine.
  • Toss the pasta in the sauce well before serving.
