  • 2 cups coconut milk
  • 2 cups vegetable broth
  • 1 cup extra firm tofu cubed
  • 1 cup mushrooms sliced
  • 1 cup water chestnuts finely sliced
  • 1/4 cup scallions sliced
  • 1 tsp sriracha
  • 1 tsp soy sauce
  • 1 tsp white wine vinegar or lime juice
  • 1 tsp agave syrup
  • 1 tsp salt
  • 1 tsp black pepper


  • In 2 tablespoons of the vegetable broth, cook the mushrooms and the tofu over medium heat, for five minutes.
  • Add the remaining ingredients, except for the scallions, and allow the mixture to continue cooking, over medium heat, for ten more minutes.
  • Serve the soup piping hot topped with the fresh sliced scallions.
