Spicy Coconut Soup Recipe
- 2 cups coconut milk
- 2 cups vegetable broth
- 1 cup extra firm tofu cubed
- 1 cup mushrooms sliced
- 1 cup water chestnuts finely sliced
- 1/4 cup scallions sliced
- 1 tsp sriracha
- 1 tsp soy sauce
- 1 tsp white wine vinegar or lime juice
- 1 tsp agave syrup
- 1 tsp salt
- 1 tsp black pepper
In 2 tablespoons of the vegetable broth, cook the mushrooms and the tofu over medium heat, for five minutes.
Add the remaining ingredients, except for the scallions, and allow the mixture to continue cooking, over medium heat, for ten more minutes.
