Pinto Potato Pepper Bowls Recipe

Ingredients
  

  • 1 15 oz can pinto beans rinsed & drained
  • 1 15 oz can sliced potatoes drained
  • 1 red bell pepper rinsed & sliced
  • 2 tbsp water
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 2 fresh sliced scallions

Instructions
 

  • In a large sauté pan heat the potatoes, beans, and peppers, over medium-high heat, stirring occasionally, for eight minutes.
  • Add the spices and cook for one more minute before removing from heat.
  • Top with fresh chopped scallions before serving.
