Locally here in Orlando there was an excellent restaurant that I loved called Cafe 118. It is no longer in existence after closing a few short months ago, but what I loved about it is that like its name, nothing was cooked over 118 degrees, which technically makes it raw food. Raw food is the absolute best thing that you can put in your body because the complete nutritional profile of the fruit or vegetable you are consuming is in tact and ready to provide you with all the nutrients your body needs to thrive!

In memory of Cafe 118 and my own desire to eat more raw foods, I searched the web for a great Pad Thai recipe. I came across a raw, vegan authority, FullyRaw by Kristina. She is wonderful. Her YouTube Channel is fabulous and she encourages everyone to start slow with several videos on how to introduce more raw food into your life. Her recipe got me thinking about my favorite juice…Noble Tangerine Juice. It’s made from local, organic tangerines and just like my prior post about their juice, my kids love it!

So I took Kristina’s idea for this wonderful Pad Thai and made a few minor adjustments, including subbing out the traditional orange juice for Noble’s Tangerine Juice, that I hope you will love. Please know that this recipe is a bit involved and the time that it takes to cut all the veggies up can be a bit much, but I promise you the end result is worth it and you will have some left over for lunch tomorrow!

Noble Raw, Vegan Pad Thai

Ingredients for Pad Thai:

  • 3-5 organic zucchini’s
  • 3 organic carrots
  • 1/4 slice of red cabbage – chopped
  • 1 organic, red pepper, sliced
  • 1 small box of portobello mushrooms, sliced thin
  • 1/4 cup of cilantro, diced
  • 5 or 6 long green onions, diced
  • 1/2 cup of pistachios

Ingredients for dressing:

  • one hand full of pistachios
  • amaranth protein or sesame seeds
  • juice of one half lime
  • 1 organic apple
  • 1 cup Noble Tangerine Juice


  1. Dice up all the veggies and combine them in a big bowl, piling them all on top of each other.
  2. Put all the ingredients for the dressing in your blender and let it run for about a minute. If you like your dressing a bit more smooth, use apple juice and not an actual apple.
