  • 2 cups fresh arugula
  • 1/2 cup fresh sliced fennel
  • 1/2 cup fresh raspberries
  • 1/2 cup Mandarin oranges well drained
  • 1 tbsp agave syrup
  • 2 tsp pear vinegar
  • 1 tsp fresh ground black pepper
  • salt to taste


  • Toss all of the ingredients very gently in a large bowl, until well combined, and serve immediately.
