This cold strawberry soup was a favorite recipe of the passengers on the cruise ship I once worked on. So much so, that their kitchen would always run out.

Cold Strawberry Soup Recipe

Ingredients
  

  • 1 lb chilled strawberries rinsed - tops removed
  • 1 juice from a fresh lemon
  • 1 cup chilled apple juice
  • 2 tbsp fresh sliced mint leaves
  • 1/2 cup sugar

Instructions
 

  • In a blender, or in a bowl with a hand-held blender, combine all of the ingredients until the mixture is very smooth.
  • Chill for at least fifteen minutes before serving, and garnish with mint.
