Cinnamon Apple Waffles Recipe

Ingredients
  

For the waffles:

  • 1 1/2 cup pancake mix
  • 2 tbsp flax seeds
  • 1 cup plant-based milk
  • 2 tbsp coconut oil
  • 1 cup diced apples
  • 1 tsp cinnamon
  • 1 pinch salt

For the vanilla syrup:

  • 1 cup sugar
  • 1 cup plant-based milk
  • 1 tsp vanilla extract

Instructions
 

To make the waffles:

  • If your waffle iron has a temperature setting, set it to medium or medium-low.
  • In the food processor or blender, grind the flax seeds finely.
  • In a large mixing bowl, combine the flax and milk and allow them to rest for a couple of minutes before adding the pancake mix, oil, apples, cinnamon, and salt.
  • Combine all of the ingredients well.
  • Cook the waffles for three to six minutes each, depending on your waffle iron, until they are golden brown.

To make the syrup:

  • Combine the sugar, milk, and vanilla in a medium sized saucepan and bring to a gentle boil over medium high heat. Allow the syrup to simmer for five minutes before serving hot over waffles or pancakes.
  • Extra syrup can be stored, covered, in the refrigerator.
