Cinnamon Apple Waffles Recipe
Ingredients
For the waffles:
- 1 1/2 cup pancake mix
- 2 tbsp flax seeds
- 1 cup plant-based milk
- 2 tbsp coconut oil
- 1 cup diced apples
- 1 tsp cinnamon
- 1 pinch salt
For the vanilla syrup:
- 1 cup sugar
- 1 cup plant-based milk
- 1 tsp vanilla extract
Instructions
To make the waffles:
- If your waffle iron has a temperature setting, set it to medium or medium-low.
- In the food processor or blender, grind the flax seeds finely.
- In a large mixing bowl, combine the flax and milk and allow them to rest for a couple of minutes before adding the pancake mix, oil, apples, cinnamon, and salt.
- Combine all of the ingredients well.
- Cook the waffles for three to six minutes each, depending on your waffle iron, until they are golden brown.
To make the syrup:
- Combine the sugar, milk, and vanilla in a medium sized saucepan and bring to a gentle boil over medium high heat. Allow the syrup to simmer for five minutes before serving hot over waffles or pancakes.
- Extra syrup can be stored, covered, in the refrigerator.
