Carrot Coconut Curry Soup

Ingredients
  

  • 1 14 oz can coconut milk
  • 1 cup thinly sliced baby carrots
  • 1 tsp curry powder
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • salt to taste
  • thinly sliced scallions for serving

Instructions
 

  • In a medium sized pot combine all of the ingredients (aside from the scallions) and cook over medium-high heat for ten minutes stirring occasionally.
  • Serve piping hot topped with freshly sliced scallions.
