I kid, but this soup will satisfy your husband and fill him with a hearty, thick tasting soup that is full of protein and veggies to keep him going strong. Preparation is easy and the smell in the house created by this recipe will make everyone run to the kitchen!

Simple Vegan Beer & Lentil Soup
Ingredients
- 1 Package Dried Lentils - Rinsed & Drained
- 1/2 Yellow Onion - Sliced
- 1/2 Red Onion - Sliced
- 3 Cloves Garlic - Minced
- 4 Stalks Celery - Cleaned and Sliced
- 2 c. Baby Carrots - Sliced
- 4 Russet Potatoes - Peeled & Cubed
- 2 - 12 oz. Cans of Your Beer of Choice
- 1 c. Fresh Chopped Parsley
- 4 c. Water + 2 Tbsp. to Saute Vegetables
- 1 tsp. Coriander
- 1 tsp. Fresh Ground Black Pepper
- Salt to taste
Instructions
- In a large pot sauté the onions, garlic, celery, and carrots in the two tablespoons of water, over medium heat, for five minutes.
- Add the beer, the four cups of water, lentils, the potatoes, coriander, parsley, and pepper.
- Reduce the heat to medium low, and stew - covered - for one hour.
- After the lentils have cooked, salt them to taste and serve piping hot. Enjoy!
