We’re always looking for dessert alternatives that are tasty and yet, health conscious. It’s usually hard to find a balance that’s actually appetizing. Right? These baked apples with pistachios are the answer! They’re so good, you’ll forget that they’re guilt-free dessert-ing at its finest! They are super easy to make, you will LOVE them and so will your kids! Perfect snack/dessert option to add to your plant-based family’s meal plan!

Baked Apples with Pistachios Recipe
Ingredients
- 4 McIntosh apples
- 1/2 cup packed brown sugar
- 1/2 cup flour
- 2 tbsp coconut oil
- 1 cup shelled pistachios
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 dash salt
Instructions
- To prepare the apples - rinse them well and dry them - then very carefully remove the top of the core with a sharp knife.
- Mix all of the filling ingredients together with a fork in a small mixing bowl.
- Preheat the oven to bake at 350°F before spooning about half of the pistachio mixture into the bottom of a medium-sized baking pan.
- Position the apples on top of the filling in the bottom of the pan before spooning the remaining filling into the holes in the center of each apple.
- Replace the cones that were removed from the apple centers before placing them in the oven to bake for 45 minutes.
- Allow the apples to cool for ten minutes before serving.
- For an extra treat - serve your apples with a drizzle of plant-based creamer or a scoop of vegan ice cream.
Notes
To cut the apples - I first cut a cone shape in the top of the apple that goes
about half way through to the apple’s center. After I remove that first cone from the top - I use my knife to carve out a bit deeper into the middle of the apple, but do not cut through all of the way to the bottom.
