Baked Apples with Pistachios Recipe

Ingredients
  

  • 4 McIntosh apples
  • 1/2 cup packed brown sugar
  • 1/2 cup flour
  • 2 tbsp coconut oil
  • 1 cup shelled pistachios
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 dash salt

Instructions
 

  • To prepare the apples - rinse them well and dry them - then very carefully remove the top of the core with a sharp knife.
  • Mix all of the filling ingredients together with a fork in a small mixing bowl.
  • Preheat the oven to bake at 350°F before spooning about half of the pistachio mixture into the bottom of a medium-sized baking pan.
  • Position the apples on top of the filling in the bottom of the pan before spooning the remaining filling into the holes in the center of each apple.
  • Replace the cones that were removed from the apple centers before placing them in the oven to bake for 45 minutes.
  • Allow the apples to cool for ten minutes before serving.
  • For an extra treat - serve your apples with a drizzle of plant-based creamer or a scoop of vegan ice cream.

Notes

To cut the apples - I first cut a cone shape in the top of the apple that goes
about half way through to the apple’s center. After I remove that first cone from the top - I use my knife to carve out a bit deeper into the middle of the apple, but do not cut through all of the way to the bottom.
