  • 1/2 ripe avocado - pit removed
  • 1/4 cup diced tomato
  • 1 tbsp fresh chopped basil
  • 2 tbsp agave syrup
  • 1 tbsp balsamic vinegar
  • 1 tsp black pepper
  • 1/2 cup arugula
  • 1/2 cup salad sprouts


  • Place the arugula and the sprouts on a plate with the avocado half.
  • In a small bowl, combine the diced tomato and the basil.
  • In another small bowl, combine the agave, balsamic, and pepper.
  • Spoon the tomato mixture into the center of the avocado, drizzle the balsamic dressing over the top, and serve.
