This Asian slaw recipe with avocado has become our new favorite! Vegan coleslaw is really simple and we oftentimes forget that slaw is just a bunch of cabbage shredded up. As a result, that means it’s packed with lots of nutrients! It only contains a few ingredients and best of all, it is VERY simple to make. Sometimes life gets hard and the last thing on your mind is making food. Thanks to easy plant-based meals like this one, that doesn’t have to be a problem for you anymore. The Vegan Coleslaw Recipe You’ve Been Looking For
Everyone knows that the sauce makes the vegan coleslaw, but many times we think that mayo has to be the main ingredient. Think again! In this Asian slaw recipe, we use peanut butter as one of the main ingredients. Second, when you combine it with agave or maple syrup, some soy sauce or coconut aminos*, and a hint of lime…your friends will be begging you for more. This recipe is fun for kids to try, but it mostly intended for plant-based parents looking for a little something different.
We really love pairing this salad with sushi night at our house. Our family really enjoys the peanut sauce. The sauce can be made with either liquid aminos or soy sauce. If you have not tried liquid aminos yet, you HAVE to give them a try. We recommend the coconut aminos from our friends at The New Primal. Asian Slaw Recipe with Avocado
Ingredients
For the salad:
- 2 cups green cabbage finely shredded
- 1/2 cup shredded carrots
- 1/2 cup fresh cilantro chopped, plus extra for garnish
- 1/2 cup bell peppers in red, orange, or yellow thinly sliced
- 1/2 cup peanuts crushed
- avocado slices
For the dressing:
- 2 tbsp natural peanut butter
- 1 tsp agave syrup
- 1 tbsp soy sauce or liquid aminos
- 1 tsp white wine or rice vinegar
- 1 tsp lime juice
- 1 tbsp water
- salt & fresh ground black pepper to taste
Instructions
To make the dressing:
- Slowly whisk first the agave, and then the other dressing ingredients, into the peanut butter before setting aside to make the salad.
To make the salad:
- In a medium-sized bowl, combine all of the salad ingredients except the peanuts and avocado by tossing them gently with tongs, or by hand.
- Drizzle the dressing over the salad and continue tossing gently before topping the salad with crushed peanuts, sliced avocado, and more cilantro.
