Almond Oatmeal Raisin Snack Bars Recipe

Ingredients
  

  • 1 cup quick cooking rolled oats
  • ½ cup oat flour
  • ½ cup creamy almond butter
  • ½ cup coconut sugar
  • ½ cup raisins
  • 2 tbsp ground flax seeds
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • ½ tsp salt

Instructions
 

  • Preheat oven to bake at 350°F.
  • Line a small rectangular baking pan with a sheet of parchment paper.
  • Mix the 2 tablespoons of ground flax seeds with ¼ cup of water and let sit for 5 minutes to thicken.
  • Mix the oats, oat flour, almond butter, sugar, baking powder, cinnamon and salt together until evenly combined.
  • Add the almond butter, flax seed mixture and vanilla extract to the dry ingredients and mix together. Add and stir in the raisins last.
  • Pour mixture into the baking pan and place in the oven to bake for 20 minutes. Then let cool down to room temperature before cutting into 4 bars.

Notes

Bars can be stored in a sealed container on counter for 2 weeks or in fridge for 1 month.
